Sweet Potato Fries
For these sweet potato fries, I cut the sweet potatoes in advance, toss with the olive oil and freeze them until I need them. If frozen, do not defrost first, or you will have soggy fries (yes, that is the voice of experience talking). I put the frozen fries on the cookie sheet, spray with an olive oil cooking spray and cook as directed in the recipe.
2 pounds sweet potatoes (yams may be too soft)
2 tsp olive oil
salt and pepper if desired
Wash potatoes and scrub skin. Cut into wedges or sticks. Put into a plastic ziplock with olive oil (and any salt or pepper if you desire) and shake to distribute oil evenly.
Spray cookie sheet with spray olive oil. Place potatoes on cookie sheet in single layer. Bake in 450 oven for 15 minutes. Turn and bake for another 15 minutes or until crisp.
