Cold Oatmeal Yogurt Muesli Recipe

This cold Oatmeal Yogurt Muesli with apples takes about 10 minutes to prepare.

It’s a nice break from cereal, and a way to enjoy cold oatmeal in the summer. With oatmeal, nuts, apples and yogurt, the protein and fiber in this easy recipe will help you feel full all morning.

To make ahead, in step 1, combine oats with 1 1/2 cups water; chill at least 2 hours and as long as overnight, then drain (oats will be fuller-textured than when short-soaked).

Serves 4
• 1 cup regular rolled oats
• ¾ cup water
• 3 tablespoons fresh lemon juice
• 2 firm sweet apples, such as Fuji or Gala
• 1/4 cup toasted or raw sliced almonds or walnuts
• 2 tablespoons maple syrup or mild honey
• 1/4 cup dried currants or toasted coconut
• 1 cup plain low-fat yogurt (optional)
• 1/2 cup blueberries (optional)

1. In a medium bowl, combine oats with 3/4 cup water. Let stand while you prepare remaining ingredients.
2. Put lemon juice in another bowl. Chop apples (do not peel) into bite size pieces.
3. Stir apples, nuts, syrup, and currents (or coconut) into oats. Divide among 4 bowls and mix with yogurt and blueberries.
