Microwave Scrambled Eggs

Microwave scrambled eggs, or cooking anything in the microwave, make me flashback to my mother's rubbery microwave chicken. But these eggs are good and really fast to make.

When cooking the eggs, be sure to use a dish with some room for expansion. As with many things in my kitchen, that was learned the hard way.

4 eggs
3 teaspoons milk
salt and pepper
cooking spray

Directions:

1. Beat eggs and milk together well.

2. Place in microwave safe dish sprayed with cooking spray.

3. Cook on high for 1 minute 30 seconds.

4. Stop microwave and stir egg mixture.

5. Return egg mixture to microwave and cook 1 to 2 minutes longer depending on microwave.

6. Remove from microwave. Eggs will continue to cook a bit while cooling.
