Healthy Waffle Recipe with Buttermilk and Almond Meal or “Power Waffles”
This healthy waffle recipe has healthy ingredients, but a smooth texture that my kids love. The waffles contain flax and almond meal, which is ground up almonds. I find almond meal at Trader Joe’s. If you can’t find almond meal at your market, you can make it by grinding whole unsalted almonds to a fine-textured meal in your blender or food processor. Don’t over grind the almonds or you will have almond butter. My shortcut: Since I hate washing bowls, I mix the wet ingredients in a large bowl, and then add the dry ingredients on top of the wet. I stir the dry ingredients gently on top of the wet, and then mix the whole thing together. Waffle aficionados know this is the wrong technique, but they are not cleaning my kitchen after I cook. And the waffles are delicious, despite my culinary short cuts. This recipe serves a family of 5, with some leftovers to reheat in the toaster oven the next day. 1 cup flour 1 cup almond meal ½ cup ground flax meal 1 tablespoon baking powder 1 teaspoon baking soda ½ tsp salt 3 large eggs 2 cups buttermilk 3 tablespoons melted butter
1. Preheat waffle iron. 2. In a large bowl, combine flour, almond meal, ground flax meal, baking powder, baking soda and salt. 3. In a medium bowl, whisk eggs, buttermilk, and melted butter. 4. Add wet ingredients to dry ingredients and stir until well blended. Batter will be thick. 5. Pour batter on waffle iron (about ¾ batter for standard waffle iron). 6. Close lid until steam stops and waffle is lightly brown and crisp, 3 to 4 minutes. My waffle iron has a green light that appears when the waffle is done. 7. Remove waffle and repeat with remaining batter.
