Healthy Pancake Recipe,
Also Known as "Powercakes"

For this healthy pancake recipe, my "secret ingredient" is ground flaxseed, which gives the pancakes an Omega-3 fatty acid and fiber boost.

Since I hate washing bowls, I mix the wet ingredients in a large bowl, and then add the dry ingredients on top of the wet. I stir the dry ingredients gently on top of the wet, and then mix the whole thing together.

Pancake purists who cringe at this are probably right, but they are not cleaning my kitchen after I cook. And the pancakes still fly off the plate, despite my culinary short cuts.

As for the optional chocolate chips, I will sprinkle a few in the pancake as they cook, or toss a few on each hot pancake after it is cooked. Because there is a little something sweet on top of the pancake, my family doesn't usually ask for syrup. They eat them either plain or with low fat whip cream or some fruit jam.

Favorite Healthy Pancake Recipe

Note: This recipe serves a family of 5, with some leftovers to reheat in the toaster oven the next day.

Ingredients:
2 cups flour (whole wheat is a healthier choice)
1/2 cup ground flaxseed
1 tablespoon sugar
1 tablespoon baking powder
1/4 tsp salt
3 large eggs
2 cups milk (use low fat, fat free, or soy)
2 tablespoons canola oil or 2 tablespoons melted butter
1/2 tsp vanilla extract(optional)

Optional toppings: chocolate chips to sprinkle on top, or cook inside pancakes, low fat whip cream, or fruit spread (jam).

Directions:
1. In a large bowl, combine flour, sugar, baking powder and salt.

2. In a medium bowl, whisk together eggs, milk, oil(or melted butter), and vanilla

3. Add egg mixture to dry ingredients and mix.

4. Preheat non-stick griddle over medium heat.

5. Use a ladle to pour about 1/4 cup batter for each pancake onto griddle. If desired, sprinkle chips on top of batter.

6. Cook until bubbles form on surface about 2 minutes.

7. Turn and cook until golden brown, about 1 more minute.
