Healthy Lunch Foods and Recipes
Everyone has their own definition of healthy lunch foods and recipes.
Now in elementary school, my oldest daughter seems to be gaining perspective on her world.
She realizes that her mom can’t cook.
At dinner, she looked at my latest incarnation of chicken tostadas and said “Don’t worry Mom. You still make really good sandwiches for lunch”. I pointed out that some days she wants a sandwich made from two slices of bread and some turkey. Nothing else. No mustard, tomato, or lettuce. Just turkey and bread, plain and simple.
“Yes Mom and your sandwiches are really good.”
It’s nice to know my daughter recognizes my true culinary talent, while developing her sense of empathy for others.
Most days, our kids bring their lunches to school. It saves money and we have a better chance of our kids eating a few healthy things while they are not at home.
As for my husband and I, sandwiches get really boring, really fast. Try some of these lunch ideas to keep it more interesting:
Sandwiches:
1. Healthy Chicken Salad with Walnuts, Apples, and Yogurt
2. Tuna Bell Pepper Pita Pocket
3. Turkey Bacon BLT with mustard
4. Turkey, Avocado, and Turkey Bacon with Lettuce
5. Lulu's Special: Ham, Avocado, and Tomato
6. Falafel ball, hummus, shredded carrots, cucumber, and lettuce in a pita pocket.
Other Healthy Lunch Choices:
1. Yogurt Surprise – Plain yogurt with frozen fruit, nuts, and/or honey
2. Dinner leftovers – In a tupperware from the night before.
3. Fast chicken noodle soup
