Healthy egg bake with ham. Fast and Easy!

My oldest daughter “Hazel” wanted something different for breakfast. She saw a recipe for a Mexican breakfast bake in a cookbook. Sounded great, but the only ingredients we had in our house that matched the original recipe were lean sliced ham and eggs. We only had a few minutes to get breakfast on the table.

I told her she was stuck eating scrambled eggs and ham. Again.

Undaunted, she went “shopping” in the refrigerator and made up her own recipe.

She must have gotten her creative cooking gene from her father.

Hazel found tomato slices and sliced red pepper left over from the previous day’s “sandwich bar” She found a couple of fresh green onions left over from a chili recipe. She lined the non-stick silicone pan with ham to make the “crust”. She layered the other ingredients on top of the ham. Taking a cue from her mother’s cooking technique, she unceremoniously poured the eggs on top. I help her put in the oven for 15 minutes. Even my pickiest eater loved this one.

Healthy Egg Bake with Ham a la Hazel

Serves 5

Ingredients
5 thin slices cooked ham
2 green onions, including green tops sliced
1 tomato sliced thin
1 red bell pepper sliced thin
8 eggs
Salt and pepper
1 ounce grated cheese cheddar or jack cheese for topping

Directions
1. Preheat oven to 400 degrees
2. Spray and 8x8 pan with non stick spray or use a silicone pan
3. Place ham on bottom of pan, so it covers the entire bottom of the pan. It will be the “crust” of the egg dish
4. Layer green onions, tomato, and bell pepper
5. Wisk eggs together in a bowl. Pour eggs into 8x8 pan on top of ham and vegetables.
6. Season with pepper to taste
7. Bake until eggs are set, about 15 minutes
8. Sprinkle grated cheese on top. Serve immediately.

Nutrition Information per serving:
187 calories
11.4 grams of fat (from the eggs)
13-20% each of vitamins A, B6, B12
8-10% each of Vitamin D, Calcium, Iron, and Folate
