Healthy Breakfast Tortilla Wrap

I make this healthy breakfast tortilla wrap when I have leftover black beans from the night before. I beat together the eggs, scrambling them either in a pan with a bit of butter or in the microwave.

1 flour tortilla -- whole wheat is better
2 eggs scrambled-- in the microwave to save time
2 tablespoons black beans
1 table spoon shredded cheese
1 table spoon salsa

How to make it fast:

1. Make eggs in microwave: click here for microwave scrambled egg recipe
2. Reheat beans in microwave until warm.

3. Heat tortilla in microwave for 20 seconds.

4. Put eggs, beans, salsa, and shredded cheese on warm tortilla.

5. Roll up tortilla, tucking in bottom end of tortilla.

6. Eat while warm. Do not wrap in a paper towel and toss into your briefcase for consumption at a later time. (Voice of experience?)
