Healthy Black Bean Salad Recipe
A Great Side Dish or Salsa!

This healthy black bean salad recipe can be used a side salad, or as a salsa with baked tortilla chips. (See chip recipe below)

Not only does the salad have festive colors, but it can be prepared in about 10 minutesThis salad can also be used with beef or chicken on a tortilla for a fast, healthy lunch or dinner. The salad can be served immediately after preparing, or chilled in the refrigerator and served cold. Refrigerate any unused portion in a sealed container.

This salad and salsa recipe has the superfood black beans and the benefits of vinegar. So enjoy it often!

Black Bean Salad and Salsa

2 cans black beans, rinsed and drained
1 cup frozen corn, thawed
1 red pepper, finely diced
1 small purple onion, chopped

Dressing: ¼ cup olive oil
¼ cup vinegar
¼ tsp pepper
½ tsp sugar
½ tsp salt
3 cloves garlic chopped or 1 tsp pureed garlic from the jar

1. Combine dressing ingredients and let stand to soften the garlic while you prepare the rest of the salad.
2. Combine all other ingredients.
3. Add dressing and toss.
4. Serve immediately at room temperature, or chill before serving.
5. Store unused portion in refrigerator.

Healthy Baked Tortilla Chips

To bake tortilla chips, buy corn tortillas. Heat oven to 400 degree convection or 425 degrees for a regular oven. Put tortillas on oven rack and bake until slightly golden about 8 -10 minutes. Cool and break into pieces for a crunch healthy chip.
