Healthy Beef Marinade A La Olga

This healthy beef marinade is a family recipe from my husband's side -- the one with the fabulous cooks. This recipe was originally intended for beef filet, but I use it regularly with tri-tip and flank steak.

Beef Filet A La Olga (the original recipe)
1 cup soy sauce
3 cloves garlic
1/3 cup olive oil
½ cup sherry
2 tsp ginger

Combine all ingredients in bowl. Place meat in bowl, cover and put in fridge 4 hours to overnight. Stand beef 30 minutes at room temperature before cooking. Cook in oven at 350 degrees until 140 degrees for medium rare/155 degrees for medium. It is about 25 minutes for a flank steak, or 30 minutes for a tri-tip steak for medium rare.

The Fast Version

1. Buy pre-chopped garlic, and pre-chopped ginger, both in jars that are stored in the refrigerator after opening. An inexpensive sherry from the grocery store works just fine.

2. Get a gallon size ziplock bag. Dump all ingredients into the ziplock and shake it up. Put meat into marinade in ziplock bag.

3. Massage (or squish as my 5 year old says) meat through the bag once in a while to make the meat more tender. Double the bag in case your 7 year old gets too aggressive with the squishing.

4. Follow rest of directions for cooking.
