Healthy Baked Chicken Recipe with Lemon and Tarragon

My new healthy baked chicken recipe is courtesy of the daily super special at my local grocery store. At the super sale, if you buy enough fresh boneless, skinless chicken breasts to feed your family of twelve, you can buy it for $1.99 a pound.

Too bad we only have a family of five.

So when my husband jubilantly bought the large family pack of chicken, I asked him what I should do with it. Thankfully, he gave me a real answer, instead of the one I probably deserved.

Here’s his healthy baked chicken recipe, plus my version of what really happened.

The Way It Was Supposed to Be....

Lemon Tarragon Baked Chicken

5 large boneless, skinless chicken breasts
1/4 cup olive oil
Juice of 2 large OR three small lemons
1/2 cup dry sherry
1 tablespoon dried tarragon

1. Preheat oven to 375 degrees.
2. Spray 9x13 pan with non-stick olive oil cooking spray.
3. Arrange chicken breasts flat in pan.
4. Mix together olive oil, lemon juice, and sherry.
5. Pour over chicken.
6. Sprinkle tarragon over chicken.
7. Cover chicken with foil and bake for 35 minutes, until done.
8. Remove chicken from pan, slice, and serve warm with some pan juice drizzled on top of chicken.

What Really Happened (We’ll just call this the alternate method)...

Lemon Tarragon Baked Chicken

5 large boneless, skinless chicken breasts
1/4 cup olive oil
Juice of 2 large OR three small lemons
1/2 cup dry sherry
1 tablespoon dried tarragon

1. Preheat oven to 375 degrees.
2. Spray 9x13 pan with non-stick olive oil cooking spray.
3. Arrange chicken breasts flat in pan.
4. Pour olive oil, lemon juice, and sherry directly on top of chicken. Eyeball the amounts because you don’t feel like washing out the measuring cups.
5. Sprinkle tarragon over chicken without measuring, until each piece has a reasonable amount of tarragon on it.
6. Cover chicken with foil and bake for 35 minutes, until done. Remove from oven.
7. Leave chicken in pan for 45 minutes because you have to pick up a child from junior literary critic training class.
8. Return to rescue chicken. Slice chicken, reheat in microwave, and serve with a ramekin of sauce on the side because your five year old likes to scream “NO SAUCE” and dip it on the side.
9. Impress your husband with his new recipe at dinner. Don’t breathe a word about what really happened.
