Healthy Baked Fish Veracruz Recipe
This healthy baked fish Veracruz recipe is spicy and tasty. We adjust the seasoning for our audience, including our children who like us to bake the fish plain and serve the sauce on the side.

4 six ounce fish filets such as tilapia or pacific halibut
1 tablespoon olive oil
2 yellow onions, sliced
4 cloves garlic, mashed
2 teaspoons dried oregano
1 teaspoon chili powder (add one teaspoon more for a spicier dish)
4 fresh jalapeno peppers finely chopped (use more or less to taste)
One 28 ounce can chopped tomatoes (drained) or 6 fresh tomatoes chopped
2 tablespoons fresh lime juice
Zest of one lime
¼ cup pimento stuffed olives for garnish, chopped if you desire.
Chopped cilantro for garnish, if desired
1. Warm the olive oil in a large sauté pan over medium heat.
2. Add the onions, stirring until tender and translucent about 10 minutes.
3. Add the garlic, oregano, chili powder, jalapenos, tomatoes, lime zest and lime juice.
4. Simmer uncovered for 5 minutes. Taste and adjust the seasoning.
5. Sprinkle the fish fillets with pepper. Place fish in baking dish that has been sprayed with non-stick olive oil cooking spray.
6. Pour the sauce evenly over the top of the fish.
7. Bake until the fish is opaque when tested with a knife, about 15 minutes
8. Serve immediately and garnish with olives and cilantro if desired.
