Fast Antipasto Recipe

Need a fast antipasto recipe? Better yet, need a fast healthy dinner you can have on the table in about 15 minutes?

We were pressed for time on a weekend, and my husband saw a lonely can of artichoke hearts in our panty. It must have wandered home with him from the market, because it would never occur to me to purchase artichoke hearts.

fast antipasto platter, fast antipasto recipe I read the label and realized they were packed in water, not in oil. Artichokes contain vitamin C, folate and fiber. My kids thought they looked green and squishy. I couldn’t argue with them on that one.

But all of a sudden the artichoke hearts appeared on a platter with turkey sausage, ham, mozzarella and swiss cheese, bell peppers, and sugar snap peas. Five minutes later, a bowl of pasta with olive oil and parmesan appeared on the side.

The kids were interested. I was in awe of my husband. He had just cleaned the refrigerator of a bunch of miscellaneous food items AND made dinner at the same time. Who says men can’t multi-task?

Since there were so many familiar choices on the platter all three kids tried the artichoke hearts. It was a split decision with one thumb up, one thumb down, and one thumb sideways (the middle of the road choice). Not bad. Now we only have to try them 14 more times to get three thumbs up.

Fast Antipasto Recipe

Serves 6

Ingredients

1 red bell pepper, chopped in ½ inch square pieces
1 yellow bell pepper, chopped in ½ inch square pieces
1 cup stringless sugar snap peas
3 ounces swiss cheese, cut in squares
4 mozzarella cheese sticks, cut in ½ inch pieces
1 can artichoke hearts in water, drained
½ pound lean sliced ham (or turkey).
4 cooked turkey or chicken sausage.

1 pound spaghetti OR 1 pound tortellini (you will only need about 8 ounces, but cook entire amount and save the rest for the next day.)
Optional for pasta : olive oil and grated parmesan cheese

Directions

1. Begin cooking pasta. Boil water and follow cooking directions on box or bag.
2. Wash and chop bell peppers.
3. Wash stringless sugar snap peas.
4. Dry all vegetables and place on platter
5. Cut swiss cheese into 1 inch squares and cheese sticks into 1 inch pieces. Place on platter
6. Open and drain can of artichoke hearts. Place on platter
7. Roll individual ham slices and place on platter.
8. Warm up pre-cooked sausage, cut in ½ inch pieces and place on platter.
9. Toss warm pasta with olive oil and parmesan if desired.
10. Serve pasta on side of platter.
