Edamame Chicken Salad Recipe
Edamame chicken salad or meatloaf?
I made my favorite healthy meatloaf recipe for dinner last night. My kids loved it, but clearly my husband was unimpressed.
In a Hail Mary move in the refrigerator, he scrounged up ingredients and made this healthy Asian style chicken salad with edamame beans and red peppers in about five minutes.
It is colorful, with wonderful texture and delicious taste. It makes a great lunch to take to work.
Edamame beans are young soybeans, usually still in the shell. They are soft, unlike more mature soybeans used for things like soy milk. You can buy shelled edamame beans at the grocery store, usually in the freezer section. Trader Joe’s also sells them shelled, refrigerated and ready to eat.
To make this meal quickly, buy:
1 cooked roast chicken, 1 package shelled edamame beans (found at grocery stores, or at Trader Joe’s), packaged shredded carrots, and one red bell pepper.
Healthy Edamame Chicken Salad
Makes four servings
Ingredients
2 whole large or three small chicken breasts, cooked and shredded OR 1 roast chicken, skin removed and breasts shredded.
1 cup shelled cooked edamame beans
1 cup shredded carrots
1 red pepper, seeded and chopped
Dressing
• 3 tablespoons extra-virgin olive oil
• 1 teaspoon Asian sesame oil
• 3 tablespoons rice vinegar
• 2 teaspoons light soy sauce
• 1/2 teaspoons sugar
• Black pepper to taste
• Optional: 1/4 teaspoon five-spice powder
Directions
1. In a large bowl, mix together cooked shredded chicken, edamame beans, carrots, and red pepper.
2. In a small bowl, whisk together dressing ingredients.
3. Add dressing to chicken mixture and toss. Can be served immediately, or will keep well for a day in the refrigerator.
