Easy Hummus in a Blender with No Tahini
Easy Hummus is adapted from a recipe in Sunset Magazine, June 2005.
I like this recipe because it only takes five minutes to make, does not require any tahini, and can be made in blender. My son thinks the blender is the world's best power tool, which means I'm safe as long as I don't show him my chain saw.
1 can (15oz) garbanzo beans
2 tablespoons olive oil
4 tablespoons lemon juice
1/2 tsp sesame oil
2 cloves garlic, peeled
1/2 tsp pepper
1/2 tsp salt
1/2 tsp cumin
1/2 tsp paprika
1. Pour garbanzo beans into strainer set over a bowl to collect liquid. Save the liquid
2. In a blender, combine garbanzo beans, 2 tablespoons olive oil, lemon juice, sesame oil, garlic, pepper, salt, cumin, paprika and 1/3 cup reserved garbanzo liquid.
3. Whirl until smooth and creamy. Adjust seasoning to taste. If mixture is too stiff, add 1 to 2 more tsp liquid. Hummus should be soft, but still stiff enough to hold its shape. Scrape into serving bowl.
