Easy Chicken Fajitas –Quick, Tasty, and Healthy!
Easy chicken fajitas. Makes me wonder, if I cook on a vacation, does it really make it a vacation?
But let's back up a minute. When I wrote about a pan last week, I thought I needed a vacation. Luckily, it happened to be time for my annual trip to the snow with my two best friends. Since we want to spend lots of time socializing instead of cooking, one girlfriend provided us this fast, healthy, and easy chicken fajita recipe.
What made it even better is that she did the 15 minutes of cooking! Thank goodness for my best friends.

Recipe Notes:
A Great Way to Serve Chicken Fajitas:
1. Skip the tortillas, and use oven baked tortilla chips instead. To bake tortilla chips, buy corn tortillas. Heat oven to 400 degrees. Put tortillas on oven rack and bake until slightly golden about 8 -10 minutes. Cool and break into pieces for a crunch healthy chip.
2. Serve with black bean salad and the best healthy guacamole for a beautiful plate.
How to Spend Less Time in the Kitchen.
1. Mix up a batch of the spice mix and keep it handy for fast use.
2. Buy chicken cut in tenders OR used precooked chicken and add to the fajita mixture at end.
Healthy and Easy Chicken Fajitas
Adapted from Bon Appetit, July 1990
Makes 4 servings
Ingredients:
2 teaspoons olive oil
1 large white onion, sliced
2 red or yellow bell peppers, sliced
½ cup chicken broth
4 boneless skinless chicken breasts, sliced, about 1.5 pounds
1 lime
1 tomato
1 avocado
Corn or flour tortillas
OR black bean salsa
And best healthy guacamole recipe
Spice Mix:
¼ teaspoon ground cumin
¼ teaspoon paprika
¼ teaspoon cayenne pepper
¼ teaspoon garlic powder (check label to be sure it is really just garlic)
¼ teaspoon dried oregano
¼ teaspoon dried thyme
¼ teaspoon cinnamon
Directions:
1. Heat oil in a skillet over medium-high heat.
2. Add onion and bell pepper and sauté for about 10 minutes until tender.
3. Add spices: cumin, paprika, cayenne, garlic powder, oregano, and thyme. Cook for 1 minute.
4. Mix in broth. Bring to a boil
5. Add chicken and stir until cooked through, about 5 minutes.
6. Squirt juice of ½ lime over mixture and stir.
7. Spoon chicken mixture into tortillas. Top with tomato, avocado, and serve with salsa if desired.
8. Garnish with lime wedges on the side
