White Bean Chicken Chili
White Bean Chicken Chili is a family favorite all year round.
A special thanks to my friend Heidi W. for giving me this recipe. She knew I would love a recipe where I didn't even need to drain the liquid from the cans after opening.
Makes 8 servings
1 tablespoon olive oil
2 medium onions chopped
1 tablespoon garlic, minced
Sauté these 3 ingredients until clear and soft
Add remaining ingredients – do not drain any of the cans – include the liquid
3 x 15 ounce cans great northern beans or white cannelli (kidney) beans
2 lbs. chicken breasts, cooked and cut up
2 x 4 oz cans green chilies (use mild unless you like it spicy)
2 teaspoons ground cumin
½ teaspoons cayenne pepper
2 cups chicken stock or water
Simmer all ingredients for 20 minutes.
Serve in bowls and top with salsa and/or grated cheese.
