Asparagus Pasta Toss Recipe

A big thank you to Sharon for submitting this tasty and healthy recipe.

Asparagus Pasta Toss

3 cups whole wheat pasta
2 cups trimmed asparagus chopped into bite size pieces (about 1 pound)
1/2 cup walnuts, whole or broken. Add more according to taste
1/4 cup ex virgin olive oil
1/4 cup packed chopped/minced fresh basil
1 clove crushed garlic
1 tsp Sea Salt (add or remove to adjust to taste)
Red pepper to taste

1. Chop basil and garlic, add to oil with salt and red pepper. Let stand while you cook pasta
2. Add asparagus to boiling water with pasta last 1 minute of cooking time
3. Strain pasta and asparagus and dip into cold water bath
4. Remove from cold water bath and strain again
5. Dry pasta and asparagus and put in bowl
6. Add oil mixture, toss in walnuts, chill and enjoy!
